Roasted Boneless Pork Ribs with Tender Broccolini and Crisp Baby Corn

Ingredients: 3 lbs. boneless pork ribs (with excess fat trimmed), salt & black pepper to taste, cooking spray and 3-4 tbs of any basting sauce you enjoy.

Step 1: Preheat oven to 375 – 400 degrees. Bring a large pot of water to a rapid boil. Add ribs to water. Bring water back to a boil. Lower heat and simmer for 7-8 minutes or until cooked through. Transfer ribs to a large plate.

Step 2: Place ribs on a baking sheet prepared with cooking spray after seasoning both sides with salt and pepper, to taste, accounting for the type of marinade or basting sauce you plan to use and its sodium content. Brush each rib with sauce. Cook 10 minutes or to your desired wellness. Turn ribs over halfway through cooking time and add additional sauce if needed. Transfer to serving dish.

Tip: Be careful to use a small quantity of sauce/marinade as a little goes a long way.  Also, store bought condiments are typically high in sugar and sodium so shop wisely or use sparingly. I used an Asian hot chili sauce in a modest quantity and was careful not to overcook the ribs. The juicier they are, the less inclined you may be to add additional condiments. Cooking times can vary amongst ovens.

Tender Broccolini and Crisp Baby Corn


Broccolini is a green vegetable similar to broccoli but with smaller florets and longer, thin stalks.

Ingredients: 3 bunches of broccolini, 1o-12 oz. baby corn, salt (I prefer Himalayan sea salt sprinkled over the greens after cooking), fresh ground black pepper and/or hot chili flakes and EVOO, to taste.

Step 1: Place greens in a microwave safe bowl with 2 tsp of water and loosely cover to steam in microwave for approximately 4 minutes. Drain excess water. Transfer greens to a heated pan coated with 1 tsp of EVOO. Sauté broccolini for 5-6 minutes over medium flame and season as desired with pepper, to taste. Transfer to a serving dish and season with sea salt.

Step 2: Sauté baby corn in a heated pan lightly coated with EVOO. Season with salt and pepper, to taste. Cook for about 6-8  minutes over medium heat stirring occasionally and allowing corn to crisp and brown. Transfer to a serving dish.
