Baked Cauliflower Chicken Tenders are a delicious alternative to breaded fried tenders. Riced cauliflower is a great substitute for breadcrumbs which are customarily used in a recipe such as this. If you are trying to lower your carbohydrates or are simply trying to get extra veggies into your diet, this works perfectly. Enjoy!

Active Time: 15 minutes 

Total time: 40 minutes 

Ingredients:

8 tenders (16 oz.)

2 eggs beaten in a large bowl

2 cups riced cauliflower seasoned with salt & pepper, garlic powder and fresh herbs, to taste, combined with 1 1/2 tbsps. EVOO in a second bowl.

Steps:

1. Preheat oven to 375 degrees.

2. Dredge chicken in eggs.

3. Place each tender in cauliflower mixture and generously coat both sides patting down cauliflower firmly.

4. Place coated tenders on greased baking sheet.

5. Drizzle additional EVOO, if desired, or spray tops with cooking spray for a golden crust.

6. Bake for approximately 20 minutes. No flipping needed.

7. Finish off in the broiler on low for 3-5 minutes.

8. Serve with balsamic glaze or your favorite dipping sauce.
