Healthy Beef Barley Stew

My recipe for Healthy Beef Barley Stew could not be easier, more satisfying or healthier. It is the perfect combination of carbohydrates and protein with tons of texture and flavor. This is certainly a meal that the entire family will enjoy. It’s satisfying in itself and tastes even better as leftovers!

Healthy Beef Barley Stew

Prep Time: 15 minutes
Cook Time: 60 minutes
Total Time: 75 minutes

Ingredients:
– 4 cups Low Fat/Low Sodium Beef Stock
– 28 ounces Canned Crushed Tomatoes
– 15 oz. Kidney Beans rinsed and drained
– 22 oz. Cannellini Beans rinsed and drained
– 3 cups Baby Spinach
– 1 cup Barley
– 1 1/2 cup Carrots
– 12 ounces Lean Beef
– 1/8 tsp Crushed Red Pepper Flakes
– Salt and Black Pepper, to taste
– 5 cups Water

Instructions:
Bring beef stock and water to a boil in a large stock pot. Add chopped carrots, beans and crushed tomatoes. Continue to boil over medium heat for 10 minutes stirring occasionally. Add barley and beef (cut into 1/2 pieces) to the pot. Continue to cook about 7 minutes over medium heat. Stir and season to taste. Reduce heat to a low simmer for 40 minutes to 1 hour. Enjoy!
