Enjoy this SUPER-QUICK SHRIMP VEGGIE SALAD 🥗 … If you are struggling to get your protein in, this recipe will make it so easy. 

You will need:

– 1 pound of large cooked shrimp

– 8 oz. bag veggie mixture. I used Trader Joe’s packaged cabbage, peppers, radishes, and broccoli bowl

– 1 tbsps EVOO, 1 tbsps low-fat mayonnaise, 1 tbsp lemon juice and s&p to taste, combined and mixed well

If cooking your own shrimp, cool before combining ingredients. Toss the shrimp, veggies and dressing adjusting the dressing to your taste. Keep refrigerated. Enjoy !
